Ingredients

  • 8 thin slices (about 6 oz.) smoked turkey (from deli)
  • 1/2 cup purchased hummus
  • 12 thin cucumber slices (1/2 medium)
  • 1/4 cup sliced ripe olives
  • 4 (1-oz.) thin slices Swiss cheese
  • 4 croissants, split

Instructions

    Place 4 squares of plastic wrap on counter. Fold 4 turkey slices in half; place 1 on each piece of plastic wrap. Spread each with about 1 tablespoon hummus. Top each with 3 slices cucumber.

    Fold remaining 4 turkey slices in half; place over cucumbers. Spread each with about 1 tablespoon hummus. Top each with olive slices and 1 slice cheese. Wrap each stack tightly in plastic wrap. Refrigerate or place in insulated cooler.

    To serve, unwrap stacks; place 1 stack in each croissant.
