Mediterranean Shrimp and Bow Ties

Ingredients

  • 6 oz. (2 2/3 cups) uncooked bow tie pasta (farfalle)
  • 1 tablespoon olive or vegetable oil
  • 1 lb. shelled, deveined, uncooked medium or large shrimp
  • 1/2 cup green onion pieces (1/2 inch)
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice
  • 1/2 cup sliced kalamata or ripe olives

Instructions

    Cook pasta to desired doneness as directed on package. Drain.

    Meanwhile, heat oil in large skillet over medium-high heat until hot. Add shrimp, onions and garlic; cook and stir 3 to 5 minutes or until shrimp turn pink. Remove skillet from heat.

    Add cooked pasta and all remaining ingredients; toss gently to mix. Return to heat; cook 1 to 2 minutes or until thoroughly heated.
