If by some chance you have leftovers after your dinner party, you can store mashed potatoes in an airtight container in a refrigerator for three to five days. If you make a big batch of these potatoes and want to freeze some individual portions for later, you can do that, too! Scoop individual portions of the potatoes onto a baking sheet lined with parchment. Freeze uncovered and then put the frozen portions into a freezer bag. To reheat straight from the freezer (or after thawing for a day or two in the fridge), place potato portions in a large pot on the stove on medium to low heat, stirring occasionally. When heated through, add a little extra butter, sour cream or seasoning, if desired. - 3/4 cup sour cream
- 2 tablespoons finely chopped onion
- 1 (3-oz.) pkg. cream cheese
- 1 garlic clove, minced
- Dash pepper
- 2 cups water
- 1/4 cup butter
- 1/4 teaspoon salt
- 1 cup milk
- 2 2/3 cups mashed potato flakes
- Chopped fresh parsley, if desired

Step1In small bowl, combine sour cream, onion, cream cheese, garlic and pepper; blend well. Set aside.

Step2In medium saucepan, combine water, butter and salt; bring to a rolling boil. Remove from heat; stir in milk and potato flakes with fork until blended. Add sour cream mixture to potatoes; blend well. Spoon into serving bowl; garnish with parsley.
