Ingredients
- 1 package (20 oz) boneless skinless chicken thighs
- 2 cups chopped onions
- 1 medium stalk celery, chopped (1/2 cup)
- 2 medium carrots, chopped (1 cup)
- 4 teaspoons curry powder
- 1 teaspoon ground ginger
- 1/4 teaspoon crushed red pepper flakes
- 1 tablespoon lemon juice
- 1 carton (32 oz) Progresso™ chicken broth (4 cups)
- 1 1/2 cups frozen mixed vegetables, thawed, drained
- 1/3 cup uncooked instant white rice
- 1/2 teaspoon salt, if desired

Step1Spray 3 1/2- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except mixed vegetables, rice and salt.

Step2Cover; cook on Low heat setting 6 to 8 hours.

Step3Break chicken into bite-size pieces by pulling apart with 2 forks. Stir in mixed vegetables and rice. Increase heat setting to High. Cover; cook 20 minutes longer or until rice is tender. Season with 1/2 teaspoon salt.
