Ingredients
- 1 1/2 cups dry red wine or beef broth
- 1/2 cup ketchup
- 1/4 cup packed brown sugar
- 3 tablespoons soy sauce
- 5 sprigs fresh thyme
- 4 lb beef short ribs
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon canola oil
- 4 large carrots, cut diagonally into 1 1/2-inch slices
- 2 medium red onions, each cut into 6 wedges
- Additional fresh thyme sprigs, if desired

Step1Spray 5- to 6-quart slow cooker with cooking spray. In slow cooker, mix wine, ketchup, brown sugar and soy sauce. Add 5 thyme sprigs.

Step2Sprinkle ribs with salt and pepper. In 12-inch skillet, heat oil over medium-high heat. Add half of the ribs; cook about 8 minutes until brown on all sides. Remove from skillet and add to slow cooker. Repeat with remaining ribs. Place carrots and onions over ribs in slow cooker.

Step3Cover; cook on Low heat setting 8 hours or until meat and vegetables are tender. Garnish with additional thyme.
