Orange-Ginger Beets

Ingredients
- 6 large beets (about 5 lb), trimmed, peeled
- 1 teaspoon grated orange peel
- 1/3 cup fresh orange juice
- 3 tablespoons honey
- 2 tablespoons white wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon grated gingerroot
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper

Step1Spray 5-quart slow cooker with cooking spray. Place beets in slow cooker. In small bowl, stir together remaining ingredients with whisk; pour over beets.

Step2Cover; cook on Low heat setting 6 hours or until beets are tender. Remove beets from slow cooker; slice.
