Ingredients
- 3 tablespoons Caribbean jerk seasoning (dry)
- 3 lb boneless skinless chicken thighs
- 1 large red or green bell pepper, chopped (1 1/2 cups)
- 1 large onion, chopped (1 cup)
- 1/2 cup chicken broth
- 1/4 cup ketchup
- 6 hoagie buns, split
Instructions

Step1Rub jerk seasoning generously over chicken thighs. In 3 1/2- to 4-quart slow cooker, mix bell pepper and onion. Place chicken over vegetables.

Step2In small bowl, mix broth and ketchup. Pour broth mixture over chicken.

Step3Cover; cook on Low heat setting 6 to 8 hours.

Step4Remove chicken from slow cooker; place on cutting board. Shred chicken with 2 forks; return to slow cooker, and mix well.

Step5To serve, with slotted spoon, spoon chicken mixture into buns.
