Ingredients
Muffins
- 1 egg
- 1/4 cup sugar
- 1 cup buttermilk*
- 1/3 cup vegetable oil
- 1/4 cup molasses
- 1 1/2 cups bran cereal shreds (do not use bran flakes)
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
Topping
- 2 tablespoons sugar
Instructions

Step1In medium bowl, lightly beat egg. Add 1/4 cup sugar, the buttermilk, oil and molasses; beat well with wire whisk. Stir in cereal. Let stand 10 minutes.

Step2In small bowl, mix all remaining muffin ingredients. Add to bran mixture; mix well. Bake immediately, or cover and refrigerate 8 hours or overnight.

Step3Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups. Divide batter evenly among muffin cups. Sprinkle each with 1/2 teaspoon sugar.

Step4Bake 20 to 25 minutes or until tops spring back when touched lightly. Remove from pan. Serve warm or cool.
