Cucumber and Tomato Salad Caprese

Ingredients
- 1 large red tomato, sliced
- 1 large yellow tomato, sliced
- 1 medium cucumber, sliced
- 8 oz. fresh mozzarella cheese, sliced
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/3 cup coarsely chopped fresh basil or lemon basil

Step1On large platter, arrange tomato, cucumber and mozzarella slices overlapping in a single layer.

Step2In small bowl, combine oil, lemon juice, salt and pepper; mix well. Drizzle over salad. Sprinkle with basil.
