Try this simple pot roast recipe for an easy dinner with few ingredients.
Bourbon Pot Roast

Ingredients
- 1 lb potatoes, cubed
- 4 carrots, cut into 1-inch chunks
- 1 beef roast (3 lb)
- 1/2 cup bourbon
- 1/2 cup water
- Salt and pepper
Instructions

Step1In 4- to 5-quart slow cooker, layer potatoes and carrots. Place beef roast on top. Pour bourbon and water directly over beef. Season with salt and pepper.

Step2Cover; cook on Low heat setting 7 to 8 hours.

Step3With slotted spoon, remove beef and vegetables from slow cooker. Let rest 15 minutes before cutting beef into slices.
