In this variation on Chinese mu-shu, flour tortillas make an easy substitute for the traditional pancakes.

Ingredients
- 1 tablespoon oil
- 1 lb. boneless beef sirloin steak, cut into thin bite-sized strips
- 1/4 teaspoon salt
- 2 garlic cloves, minced
- 1 jalapeño chile, seeded, chopped
- 8 oz. (2 to 3 large stalks) bok choy, thinly sliced (5 cups)
- 1 medium green bell pepper, cut into thin strips
- 1/4 cup hoisin sauce
- 8 (6-inch) flour tortillas
Instructions

Step1Heat oil in 12-inch skillet or wok over medium-high heat until hot. Add beef strips, salt, garlic and chile; cook and stir 3 to 5 minutes or until beef is browned and of desired doneness. Remove beef from skillet; cover to keep warm.

Step2In same skillet, combine bok choy and bell pepper; cover and cook 4 to 6 minutes or until vegetables are crisp-tender, stirring occasionally. Return beef to skillet. Add hoisin sauce; cook and stir 1 minute or until thoroughly heated.

Step3Meanwhile, heat tortillas as directed on package.

Step4To serve, spoon about 1/2 cup beef mixture down center of each warm tortilla. Fold or roll up each tortilla.
