Sweet Red Pepper Turkey Lo Mein

Ingredients
- 8 oz. uncooked lo mein noodles
- 1/2 cup Progresso™ chicken broth (from 32-oz. carton)
- 1/2 cup purchased stir-fry sauce
- 1 tablespoon cornstarch
- 1 teaspoon grated lemon peel
- 1 tablespoon oil
- 3/4 lb. fresh turkey tenderloin, cut lengthwise into 2-inch-wide strips, thinly sliced
- 1/8 teaspoon salt
- 2 cups frozen broccoli cuts
- 2 medium red bell peppers, cut into 1-inch pieces
- 1 medium onion, sliced

Step1Cook noodles to desired doneness as directed on package. Drain.

Step2Meanwhile, in small bowl, combine broth, stir-fry sauce, cornstarch and lemon peel; blend well. Set aside.

Step3Heat oil in large skillet or wok over medium-high heat until hot. Add turkey strips; sprinkle with salt. Cook and stir 3 to 5 minutes or until turkey is no longer pink. Remove turkey from skillet; cover to keep warm.

Step4Add broccoli, bell peppers and onion to same skillet; cook and stir 4 to 5 minutes or until vegetables are crisp-tender. Return turkey to skillet.

Step5Stir cornstarch mixture until smooth. Add to skillet; cook and stir until sauce is bubbly and thickened. Serve over noodles.
