These melt-in-your-mouth lemon bars are bursting with citrus flavor. Even the two-ingredient glaze packs a bright, lemony punch! Made with ingredients that you probably already have on hand, this is the perfect dessert recipe to whip up for big parties or gatherings any time of year.

  • Thanks to our friends at Betty Crocker, the lemon bar has been a picnic classic since 1963. It is hard to imagine a spring or summer gathering without the bright flavor of lemon bars and this easy recipe brings the classic treat to life in only five steps. Best of all, most of the ingredients can be found in your kitchen already! We recommend using fresh lemon juice for the best flavor so plan on buying two to three lemons for this recipe. In step one, you’ll notice that you only partially bake the crust before adding the lemon curd filling. This is important for getting the right texture for your base, not too soggy and not overbaked. Ingredients

Base

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup butter or margarine, softened

Filling

  • 4 eggs
  • 2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup lemon juice

Glaze

  • 1 cup powdered sugar
  • 2 to 3 tablespoons lemon juice

Instructions

    Heat oven to 350°F. In large bowl with electric mixer, beat base ingredients on low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9-inch pan. Bake 20 to 30 minutes or until light golden brown.

    Meanwhile, in large bowl with wire whisk, lightly beat eggs. Beat in remaining filling ingredients except lemon juice until well blended. Beat in 1/4 cup lemon juice.

    Remove partially baked base from oven. Pour filling evenly over warm base.

    Return to oven; bake 25 to 30 minutes longer or until top is light golden brown. Cool completely, about 1 hour.

    In small bowl, mix 1 cup powdered sugar and enough lemon juice for desired spreading consistency until smooth. Spread glaze over cooled bars. Cut into bars.
