New Potato And Green Bean Salad With Feta

Ingredients
- 1/2 lb. new red potatoes, quartered
- 1/2 lb. fresh green beans, cut into 2-inch pieces (2 cups)
- 2 tablespoons finely chopped red onion
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoons chopped fresh oregano or 1/2 teaspoon dried oregano leaves
- 1 garlic clove, minced
- 2 tablespoons white wine vinegar
- 2 teaspoons extra-virgin olive oil
- 1 oz. (1/4 cup) crumbled feta cheese
Instructions

Step1In large saucepan or Dutch oven, combine potatoes, green beans and 2 cups water; bring to a boil. Reduce heat to medium; cook 10 to 12 minutes or until tender. Drain; rinse with cold water to cool. Drain well.

Step2Meanwhile, in small bowl, combine all remaining ingredients except feta cheese; mix well.

Step3Just before serving, place potatoes and green beans in serving bowl. Add vinegar mixture; toss gently to coat. Sprinkle with cheese.
