Curried Chicken and Couscous Salad

Ingredients
- 1 1/2 cups water
- 1/4 teaspoon salt
- 1/2 cup frozen sweet peas
- 1 cup uncooked couscous
- 1/3 cup mayonnaise
- 1/3 cup orange juice
- 1 teaspoon curry powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground red pepper (cayenne)
- 2 cups cubed cooked chicken
- 1/4 cup sliced green onions
- 1/4 cup golden raisins
- 1/4 cup slivered almonds
Instructions

Step1In medium saucepan, combine water and salt. Bring to a boil. Add peas; return to a boil. Remove from heat; immediately stir in couscous. Cover; let stand 5 minutes. Fluff couscous with fork; cool 20 minutes.

Step2Meanwhile, in small bowl, combine mayonnaise, orange juice, curry powder, salt and ground red pepper; blend well.

Step3In large bowl, combine cooled couscous and peas, and all remaining ingredients. Pour dressing over salad; toss gently to coat. Cover; refrigerate at least 30 minutes to blend flavors.
