Here's one of our "most requested" recipes. The Parmesan-potato mixture bakes up golden and crisp, sealing in the chicken's natural juices. It's as delicious as fried chicken--but with a lot less fuss.

Crispy Herb Baked Chicken

Ingredients

  • 2/3 cup mashed potato flakes
  • 1/3 cup grated Parmesan cheese
  • 2 teaspoons dried parsley flakes, if desired
  • 3/4 to 1 teaspoon garlic salt
  • 1 (3 to 3 1/2-lb.) cut-up frying chicken, skinned if desired
  • 1/3 cup margarine or butter, melted

Instructions

    Heat oven to 375°F. Grease, or line with foil and grease 15x10x1-inch baking pan or 13x9-inch pan.

    In medium bowl, combine potato flakes, Parmesan cheese, parsley flakes and garlic salt; mix well. Dip chicken pieces in margarine; roll in potato flake mixture to coat. Place in greased pan.

    Bake at 375°F. for 45 to 60 minutes or until chicken is fork-tender and juices run clear.
