Dressing
- 2 tablespoons cider vinegar
- 2 to 3 teaspoons dried Cajun seasoning
- 1/3 cup vegetable oil
Salad
- 1 package (9 oz.) frozen diced cooked chicken breast, thawed
- 1 cups cold cooked rice
- 3 stalks celery, diced (1 cup )
- 6 medium green onions, chopped (1/3 cup)
- 1 large tomato, diced (1 cup)
- 1 medium green bell pepper, diced (1 cup)

Step1In small bowl, combine vinegar and Cajun seasoning; mix well with wire whisk. Gradually beat in oil until well blended.
