Slow-Cooker Maple-Orange Sweet Potatoes

Ingredients
- 6 large sweet potatoes (5 1/2 lb), peeled, cut into 2-inch cubes
- 1 cup orange juice
- 3/4 cup whipping cream
- 1/2 cup real maple syrup
- 1/4 cup butter, cut into pieces
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1/2 cup chopped pecans, toasted
Instructions

Step1Spray 6-quart slow cooker with cooking spray. Place sweet potatoes in slow cooker; pour orange juice over potatoes.

Step2Cover; cook on Low heat setting 8 hours.

Step3Drain potatoes, discarding orange juice. Return potatoes to slow cooker. Mash potatoes with potato masher or spoon. Add whipping cream, syrup, butter, salt and pepper; stir until butter is melted and mixture is smooth. Sprinkle with toasted pecans.
