Scalloped Potatoes and Turkey

Ingredients
- 1 lb ground turkey breast
- 1/2 teaspoon ground thyme
- 1/8 teaspoon pepper
- 1 box (7.8 oz) scalloped potato mix
- 2 tablespoons butter or margarine
- 2 1/2 cups boiling water
- 1 1/2 cups fat-free (skim) milk
- 1 medium red bell pepper, seeded, chopped
- 1 medium onion, thinly sliced
Instructions

Step1Spray 10-inch skillet with cooking spray. Heat over medium-high heat until hot. Add turkey; cook until no longer pink. Stir in thyme and pepper.

Step2In large bowl, mix contents of sauce packet from potato mix, potato slices and butter. Add boiling water; stir until butter melts. Add milk; mix well.

Step3Stir in turkey, bell pepper and onion. Spoon mixture into 3 1/2- to 4-quart slow cooker. With back of spoon, press down potatoes until covered with sauce.

Step4Cover; cook on Low heat setting at least 7 hours.
