Here's a fun new (and oh so simple) way for your family to enjoy tacos on a frosty December night.

Chicken Taco Bubble-Up

Ingredients

  • 3 cups shredded deli rotisserie chicken (from 2-lb chicken)
  • 1 packet (.85 oz) Old El Paso™ Chicken Taco Seasoning Mix
  • 1 can (15 oz) Progresso™ black beans, rinsed and drained
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 cup frozen whole kernel corn (from 12-oz package)
  • 1/4 cup water
  • 1 can refrigerated Pillsbury™ Grands!™ Flaky Layers Buttermilk Biscuits (8 count)
  • 1 package (8 oz) shredded Mexican cheese blend (2 cups)

Instructions

    Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.

    In 12-inch nonstick skillet, cook chicken, taco seasoning, black beans, green chiles, corn and water over medium heat 5 to 6 minutes, stirring frequently, until thoroughly heated. Remove from heat.

    Separate dough into 8 biscuits; cut each into 8 pieces. Add biscuit pieces and 1 cup of the cheese to the chicken mixture and stir gently until pieces are coated. Spread evenly in baking dish.

    Bake 18 to 23 minutes or until biscuits are golden brown and no longer doughy in center.

    Sprinkle with remaining 1 cup cheese. Bake 3 to 4 minutes longer or until cheese is melted.
