Cheesy Sausage Muffins

Ingredients
- 1/2 lb bulk pork sausage
- 2 cups baking mix
- 1 1/2 cups shredded sharp Cheddar cheese (6 oz)
- 1/8 teaspoon ground red pepper (cayenne)
- 3/4 cup milk 2 tablespoons butter or margarine, melted
- 1/2 teaspoon Dijon mustard
- 1 egg

Step1Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.

Step2In 10-inch skillet, cook sausage over medium-high heat 5 to 6 minutes, stirring to crumble, until no longer pink; drain.

Step3In large bowl, stir baking mix, cheese and red pepper. In medium bowl, beat milk, butter, mustard and egg with fork or wire whisk. Add milk mixture to baking mixture, stirring just until moistened. Stir in sausage. Spoon evenly into muffin cups.

Step4Bake 17 to 20 minutes or until golden brown. Cool in pan 5 minutes. Serve warm.
