medium avocados, sliced lengthwise, pitted and peeled

In medium bowl, coarsely mash avocados, lime juice, salt and hot sauce using potato masher, pastry blender or fork. Serve with tortilla chips.
Avocados are ready to use when they are black with a hint of green and give slightly when pressed.
You can substitute 1 seeded finely chopped jalapeño chile or 1/4 teaspoon ground red pepper (cayenne) in place of the hot sauce.
Add something flavorful to this basic guacamole: Add 2 tablespoons red or white onion, 2 tablespoons chopped fresh cilantro, 1 clove finely chopped garlic or 1 medium seeded chopped tomato.
