Ingredients
- 3/4 cup sugar
- 3/4 cup firmly packed brown sugar
- 1 cup margarine or butter, softened
- 1/2 teaspoon mint extract
- 1/4 teaspoon green food color
- 2 eggs
- 3 3/4 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 3 tablespoons sugar
- 1/4 cup green colored decorator sugar

Step1In large bowl, combine 3/4 cup sugar, brown sugar and margarine; beat until light and fluffy. Add mint extract, food color and eggs; beat well. Add flour, baking powder and salt; mix well. Cover with plastic wrap; refrigerate at least 2 hours for easier handling.

Step2Heat oven to 375°F. Shape dough into 1-inch balls. For each cookie, place 3 balls, sides touching, in triangular shape on ungreased cookie sheet. Repeat with remaining dough, placing cookies 2 inches apart. With bottom of glass dipped in sugar, flatten each three-leaved cookie. With sharp knife, score each leaf in half; do not cut through. Sprinkle cookies with green colored sugar.

Step3Bake at 375°F. for 6 to 10 minutes or until light golden brown. Cool 1 minute; remove from cookie sheets.
